What To Do With Those Thanksgiving Leftovers
Kelly Rossiter was recycling,repurposing and repackaging Thanksgiving leftovers for years on the late website Planet Green. Many of these were transferred to TLC Cooking. They are not beautifully formatted there and the photos are lost, but they are still delicious.
Use up That Leftover Turkey: Barley Risotto with Turkey and Mushrooms
Feel free to use leftover turkey, fresh turkey or chicken. If you are vegetarian add a few more types of mushrooms, or maybe you have some Tofurky left over from yesterday to toss in. More at TLC.

Make a Frittata With Your Leftovers
Sometimes I find myself with bits and pieces of ingredients left over from other recipes and I have to find a way to use them up so I don’t end up throwing them away. Other than soup, one of my favourite ways to use up odds and ends is to make a frittata. A frittata is essentially just an open faced omelette, but I prefer it because you can put as much stuff on top as you like and you don’t have to worry about having to fold it over perfectly.
