When it comes to the classic dishes of the culinary arts, many people are afraid to make them at home. One of the reasons for this is the fact the word “gourmet” is usually associated with them and the word “gourmet” to many is the equivalent of the word “impossible.” Fact is, nothing could be farther from the truth. Also many of these dishes are restaurant favorites and many consider these types of dishes to be the types only trained Chef’s can prepare. Once again, nothing could be farther from the truth. With this series, I will delve into the world of the “classics” and prove you too can bring the joys of the culinary arts into your home kitchen!
The chances are pretty strong you have tried a version of Buttermilk Bread. Unfortunately, the version you have probably tried has been from a supermarket, loaded with chemicals and wrapped in plastic. That wasn’t really Buttermilk Bread. That was sliced poison!
Real Buttermilk Bread is a true treat. It has a texture beyond compare and a taste which plays with the tongue. As far as loaf breads are concerned, it is somewhat more rich in flavor. It makes for wonderful sandwiches and a simply superb toast or French toast. If you are a bread maker and Buttermilk Bread is not a part of your stable of breads, it should be!
Ingredients needed to make Buttermilk Bread (makes 2 loaves):
- 6 cups flour
- 3 Tbs. sugar
- 1 Tbs. yeast
- 2 ½ tsp. salt
- ¼ tsp. baking soda
- 1 cup buttermilk
- 1 cup water
- 1/3 cup butter
Steps:
- In a large bowl whisk together 3 cups flour, sugar, yeast, salt and baking soda.

In a small saucepan over low heat whisk together the buttermilk, water and melted until the butter as melted.
- Stir the buttermilk mixture into the yeast until combined. Stir in the remaining flour to make a soft dough.

Place the dough on a floured surface and knead 10 minutes. Let the dough rest 20 minutes.
- Divide the dough in half and roll each half into a 12×7 rectangle. Roll each piece up jellyroll fashion so they fit into the pans.

Line the bottoms of 2 9×5 loaf pans with parchment paper. Place the dough in the pans and let rise 2 hours.
- Pre-heat oven to 375.

Place in the oven and bake 35 minutes.
- Remove from the oven and cool in pan 10 minutes. Remove from the pans and cool on a rack.
