Cabernet Grill was opened in 2002 by Executive Chef and Cotton Gin Village owner Ross Burtwell. The restaurant has become renowned for inventive local Texas Hill Country cuisine and boasts the most extensive all-Texas wine list in the country. The Cabernet Grill menu is dynamic and ever-evolving. Each dish is created to complement a wine list that includes the best that Texas vineyards have to offer, from new boutique winery selections to Texas’ most award-winning labels.
Examiner interviewed Executive Chef Ross Burtwell on April 9 about his lovely bed and breakfast and Cabernet Grill restaurant. He prepared us a several course five star meal that is pictured in our exclusive slideshow.
Ross shared the story of how he bought the Cotton Gin Village and Cabernet Grill. Ross said, “The property was built by a couple of tobacco settlement attorneys who had more money than they knew what to do with. I had a friend who knew about the opportunity and sent me this way and the rest is history.”
The original concept menu for the restaurant included Cajun food, seafood and steak. Ross scrapped that idea and decided to come up with his own blend of ideas, inspired by Texas Hill Country and the influences already in this area. Ross incorporated wines from the local wineries and noticed they were selling more than the more traditional wine choices on the menu.
Ross stated, “As the years went by, the amount of Texas wines on the wine list had evened out to about 50 / 50. It was decided to take it to the next level and take care of the neighbors and switch to an all-out Texas wine menu. “They have to take a different look at things,” Ross related about visitors to the Cabernet Grill who were trying Texas wines for the first time.
Featured Texas vineyards at the Cabernet Grill include Becker Vineyards and Grape Creek Vineyards from Stonewall, Texas; Inwood Estates Winery from Dallas, Texas; Messina Hof Winery from Bryan, Texas; Pedernales Cellars from Stonewall, Texas; Sandstone Vineyards from Mason, Texas; Texas Hills Vineyard from Johnson City, Texas and Torre di Pietra Vineyard from Stonewall, Texas.

The Guadalupe cabin is an 1890 story-and-a-half Kentucky cabin featuring loft bedroom with queen-size bed overlooking living room fireplace. Pecos is an 1879 single-story cabin from Tennessee that is handicapped accessible. The Rio Grande is an 1888 single-story cabin from Kentucky. Llano is an 1895 single-story cabin from Kentucky. The Pedernales is an 1887 single story cabin from Tennessee with a whimsical faux loft. The Red River North and South, which is an 1854 pre-Civil War duplex cabin from Kentucky, is reminiscent of the traditional dogtrot design. The Big House is a 3,000 square foot house that includes a fully equipped kitchen, full-size grill and a large outdoor fire pit.
Nearby Pedernales Cellars Winery is located in Stonewall, Texas. Examiner interviewed Julie Kuhlken, the Design and Communications Director at Pedernales Cellars, about their Texas wine offerings.
Julie said, “The winery has been open since 2005, but we’ve been in the wine business since 1995. My parents planted the estate vineyard. It’s a nice place because it’s very old earth that has been pushed up. It makes it very good for growing grapes.”
“They planted the vineyard and for 10 years they sold grapes. In 2005 the next generation of the family decided to start the winery. At this point my parents have retired from the vineyard. They still go out and prune the plants. Robert Brown is the vineyard manager.”
Julie stated, “What my parents did is what many people did in 1995. They planted their Cabernet Sauvignon, their Merlot and Chardonnay because those were the popular wines at the time. It turned out many of them do not do well in the Hill Country. It’s just the wrong climate for many of those grapes. When we did the winery, we decided to work with what grows the best here.”
“We picked Southern French, Spanish and Portuguese varietals to grow. All of them are doing well but the red grape that people coming back to in Texas is the Tempranillo.We’ve had a lot of success with the Viognier, a southern Rhone varietal and the Albarino, a Spanish varietal as far as white wines go.”
Julie said that they just found out that Pedernales Cellars 2012 Viognier Reserve won a Grand Gold at the 2013 Lyons International Wine Competition. The winery enjoyed competing in the prestigious competition. They were the only American winery to win a double gold. The 2012 Viognier Reserve will be pre-released to Pedernales Cellars wine club members on May 11th. It will be released to the general public on May 17th, and the winery is taking pre-orders for those who would like it shipped to them when as it is released.
